Dry Mixes in a Jar... Three Emeril Seasonings

Dry Mixes... these mixes are not for canning, but may be stored in canning jars.



Emeril's Essence Creole Seasoning
Found on emerils

INGREDIENTS

* 2-1/2 tablespoons paprika

* 2 tablespoons salt

* 2 tablespoons garlic powder

* 1 tablespoon black pepper

* 1 tablespoon onion powder

* 1 tablespoon cayenne pepper

* 1 tablespoon dried leaf oregano

* 1 tablespoon dried thyme

DIRECTIONS

* Combine all ingredients thoroughly and store in an airtight jar or container.



Emeril's Jerk Recipe
Found on Emerils

INGREDIENTS

* One-half cup ground allspice

* One-half cup packed brown sugar

* 6 to 8 garlic cloves

* 4 to 6 scotch bonnet peppers

* 1 tablespoon ground thyme or 2 tablespoons dried thyme leaves

* 2 bunches green onions

* 1 teaspoon ground cinnamon

* One-half teaspoon grated nutmeg

* Salt and pepper to taste

* 2 tablespoons soy sauce to moisten

DIRECTIONS

* Put all the ingredients in a food processor and blend until smooth. Keep the sauce refrigerated. (Increase or decrease the hot peppers and garlic to your taste.)

Emeril's Southwest Seasoning

* YIELD: About 1/2 cup

INGREDIENTS

* 2 tablespoons chili powder

* 2 tablespoons paprika

* 1 tablespoon ground coriander

* 1 tablespoon garlic powder

* 1 tablespoon salt

* 2 teaspoons ground cumin

* 1 teaspoon cayenne pepper

* 1 teaspoon crushed red pepper

* 1 teaspoon black pepper

* 1 teaspoon dried leaf oregano

DIRECTIONS

* Combine all ingredients thoroughly and store in an airtight jar or container.
