Dry Mixes in a Jar... Tortilla Mix (a couple of 'em)



Dry Mixes... these mixes are not for canning, but may be stored in canning jars.

Tortilla Mix

Tortilla Mix

16 C. flour (use unbleached or add up to 1/2 whole wheat) 

2 Tbsp. baking powder 

2 Tbsp. salt (you can use a little less, but some salt really does make a difference in the flavor) 

1/2 C-1 C. shortening (I like about 3/4 C. of palm shortening (no trans fat!)) 

Combine dry ingredients in a bowl and stir with whisk to fully mix. Cut in shortening with pastry blender or hands. Store mix in airtight container. 

To Make: 

Place 2 C. tortilla mix in a bowl, making a well in the center. Add 1/2-3/4 C. warm water, a little at a time, mixing until you have a soft dough.

Knead dough for a short time till it becomes elastic. Cover with plastic and let it rest 10-15 minutes. Form small balls, pull the dough around the bottom of the ball to make top smooth. Set aside, covered with plastic wrap.

Dip dough balls in flour and roll out thinly.

Cook on preheated dry griddle until top begins to bubble, Flip and cook for about 15 seconds more.

To keep warm: stack between towels. Wrap in plastic wrap and store in refrigerator.


Tortilla Mix #2

16 c. Flour 

2 T. Baking Powder 

2 T. Salt 

1/2 c. Lard 

To make Tortillas 

2 c. Mix, 

1 c. Water. 

Mix, divide into 15 little balls, cover and rest 10­-15 minutes. Roll out as thin as you can, thinner the better. Fry on dry hot 350 griddle 2 min. each side.

2 Cups rice 

1 cup angel hair pasta broken into small pieces 

1/4 cup dried parsley 

6 tbsp. chicken bouillon granules 

2 tsp thyme 

1/2 tsp. salt 

1/2 tsp. pepper 

Combine all ingredients mix well. Store in airtight container. 

Directions: 

Melt 2 Tbsp. butter in a saucepan. Add 1 cup of mix. Add 2-1/4 cup water bring to a boil reduce heat cover simmer 15 minutes.

Dry Mixes in a Jar... Refried Bean Mix

Refried Bean Mix Recipe

You'll Need: 

3 cups dried navy or pinto beans 

3 tsp. dried cumin 

3 tsp. chili powder 

1 tsp. salt 

pepper 

3 T. dried minced onion 

In a coffee grinder, food mill or blender, grind beans until a flour consistency. Combine all ingredients and store jar or ziploc bag. 

To Use: 

3/4 cup mix 

2-1/2 cups boiling water 

Mix with a wire whisk until combined. Bring to boil, cover, reduce heat to low and simmer for 4-5 minutes or until thickened. Mixture will thicken more as it cools. Refried beans will remain thickened even when reheating. You can add salsa or chopped chili peppers for added zip.

3 cups uncooked long grain rice 

6 teaspoons chicken bouillon granules 

1/4 cup dried parsley flakes 

2 teaspoons onion powder 

1/2 teaspoon garlic powder 

1/4 teaspoon dried thyme 

ADDITIONAL INGREDIENTS: 

2 cups water 

1 tablespoon butter 

1 cup rice mix

Combine all ingredients in a storage container with a tight-fitting lid. 

To prepare rice as a side dish: Combine 2 cups water and 1 tablespoon butter in a saucepan; bring to a boil. Stir in one rounded cup of rice mix. Reduce heat; cover and simmer for 15-20 minutes.

I know a lot of you buy stuffing mix for some of your recipes... STOP and make your own

30 slices firm bread 

3 Tbsp. instant minced onion 

2 tsp. garlic salt 

1/2 tsp. seasoned pepper 

1/3 cup cooking oil 

3 Tbsp. dried parsley flakes 

3/4 tsp. ground sage

Preheat oven to 300 degrees. Cut bread slices into 1/2″ cubes and place in two 13×9″ baking pans. Toast bread cubes at 300 degrees for 45 minutes, or until toasted, stirring occasionally. Remove from oven and cool slightly. In large bowl, mix together onion, garlic salt, seasoned pepper, oil, parsley flakes, and sage. Lightly toss bread cubes with seasonings to coat cubes. Place in a large airtight container and label “Herbed Stuffing Mix”. Store in the refrigerator and use within 2 months. You can freeze the mix up to 6 months. Use in any recipe calling for stuffing mix. 

2 cups stuffing mix equal to 1 box.

To make stuffing: 

2 cups stuffing mix

1/2 cup water 

2 Tablespoon butter 

1 chicken bouillon 

In a saucepan over medium heat combine water, bouillon, and butter bring to a boil add 2 cups stuffing mix. Cook 2 to 3 minutes until all liquid is absorbed.

1 cup nonfat dry milk powder 

1/2 cup powdered non dairy creamer 

1/3 cup instant coffee granules 

1/3 cup sugar 

1/4 cup instant vanilla pudding mix 

ADDITIONAL INGREDIENT FOR HOT LATTE: 

3/4 cup hot water 

ADDITIONAL INGREDIENTS FOR ICED LATTE: 

1/4 cup hot water 

1/4 cup cold water 

1/2 cup ice cubes 

In a blender, combine the milk powder, creamer, coffee granules, sugar and pudding mix; cover and process until mixture is a fine powder. Store in an airtight container for up to 6 months. 

To prepare hot latte: Dissolve 1/4 cup mix in hot water; stir well. 

To prepare iced latte: Dissolve 1/4 cup mix in hot water; stir in cold water. Transfer to a blender; add ice. Cover and process until blended.

Homemade Hot Cocoa Mix

YIELD: 76-2 TBSP SERVINGSIngredients:

2 vanilla beans 

4 cups granulated sugar 

24 oz high-quality semisweet chocolate, coarsely chopped 

9 oz dark chocolate, coarsely chopped 

2 cups Dutch process cocoa

Directions:

Split and scrape vanilla beans and place in a large bowl or jar with the sugar. Work seeds into the sugar with your fingers. Bury the pods under the sugar. Cover tightly and let stand overnight (or up to months–vanilla sugar keeps forever) at room temperature.

In a food processor fitted with metal blade, process semisweet chocolate and dark chocolate until finely ground, using 4-second pulses. Process in batches, if necessary.

Remove pod from sugar. Add ground chocolate and cocoa powder to sugar and whisk to blend, making sure to combine well. Store mix airtight at room temperature for up to six months.

Assemble your gifts: 

Scoop 1-1/2 cups of cocoa mix into a medium sized bag. Attach a tag with the following note: Heat 8 oz milk on med-high heat until scalded. Add 2 Tbsp cocoa mix and whisk until smooth. Top with a marshmallow. Makes 12 servings.

2 cups powdered non-dairy creamer 

1/2 cup dry milk powder 

1 cup confectioners’ sugar 

1/4 cup brown sugar 

1 teaspoon ground ginger 

1 teaspoon ground cinnamon 

1 teaspoon ground cloves 

1 teaspoon ground cardamom 

1 teaspoon ground allspice

In a food processor, combine instant tea, powdered creamer, milk powder, confectioners’ sugar and brown sugar. Add ginger, cinnamon, cloves, cardamom and, allspice. Process for 2 minutes. Store in an airtight container. To serve, place 4 teaspoonfuls in a mug, and fill with hot water stir and enjoy!

2 cups granulated sugar 

2 cups plain non dairy powdered coffee creamer 

1/2 cup (full) instant espresso granules ( I use Cafe Bustello Instant Espresso Coffee) 

2 teaspoons ground cinnamon 

1. Pour sugar in food processor and process for about 90 seconds. This will make the granulated sugar finer, but not as fine as powdered sugar (which doesn't dissolve well in coffee- take it from me!) 

2. With food processor off add powdered coffee creamer, instant espresso granules and ground cinnamon. Process 10-15 seconds to combine. Keep in airtight container.

Dry Mixes in a Jar... Another Ranch Dressing Mix



Dry Mixes... these mixes are not for canning, but may be stored in canning jars.

Ranch Dressing 
Mix 

3/4 cup dry buttermilk powder 

2 tablespoons dried parsley, crushed 

2 teaspoons dried dill weed (or more depending on taste) 

3 teaspoons onion powder 

3 teaspoon dried minced onion 

1/4 teaspoon salt (you can adjust this up or down depending on taste. I prefer lower sodium so I tend to go really skimpy on the salt.) 

3 teaspoons garlic powder 

1/2 teaspoon ground pepper 

Combine all ingredients in the container of a food processor blender and process on high speed until well blended and powdery smooth. 

To use mix: For traditional salad dressing: Combine 1 tablespoon dry mix with 1 cup milk and 1 cup mayonnaise. Mix well. 

For healthier version: 2 cups Plain Greek Yogurt, mix with 1 Tbsp dressing mix (more or less depending on taste), add enough milk to reach consistency you wish. Makes 2 cups salad dressing.

Instant Italian Salad Dressing Packets

Recipe Ingredients: 
* DRY MIX: 

* 1 TB garlic powder 

* 1 TB onion powder 

* 2 TB oregano 

* 1 tsp pepper 

* 1/4 tsp thyme 

* 1 tsp basil 

* 1 TB parsley 

* 1/4 tsp celery seed 

* 2 tsp salt

WHEN READY TO SERVE
* 2 TB mix 

* 1/4 c apple cider vinegar 

* 2 TB water 

* 2/3 c extra virgin olive oil

Recipe Instructions:

Combine dry ingredients in a bowl. 2 TB of mix equals one salad dressing packet. Mix one "packet" of seasonings in a cruet or jar with oil, water, and vinegar. OPTIONAL: For those who like a slightly sweeter dressing, add up to 1 TB of your favorite sweetener (honey, sucanat, etc.).

Italian Dressing Mix

1 Tbsp. dried parsley leaves, crushed 

1/4 tsp. ground oregano 

1/2 tsp. dried sweet basil leaves, crushed 

1/4 tsp. ground thyme or marjoram 

1/2 tsp. celery seed 

1/4 tsp. garlic powder 

2 Tbsp. grated Parmesan cheese

1-1/2 tsp. granulated sugar 

1/8 tsp. salt 

pinch of pepper 

Combine all ingredients in a small bowl, stirring until evenly distributed. Wrap airtight in heavy-duty aluminum foil and label. Store in a cool, dry place. Use within six months. Yield: 1 package (4 tbsp.) To make many packages of this at once, place a square of foil for each package on the table. Measure out the ingredients, one at a time onto each square of foil (first measure the dried onion onto each piece of foil, then the parsley, etc.) Wrap each tightly and label. 

To make the dressing: 
1 package (4 tbsp.) Italian Dressing Mix 

1/3 cup red wine vinegar 

3/4 cup vegetable oil 

Put all ingredients into a bowl, cruet, or pint jar and stir or shake until well blended. Cover and refrigerate 30 minutes before serving. Yield: about 1 cup of dressing

* 1 tablespoon garlic salt

* 1 tablespoon white sugar

* 1 tablespoon dried parsley

Directions

1. In a small bowl, mix together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.

2. To prepare dressing, whisk together 1/4 cup white vinegar, 2/3 cup canola oil, 2 tablespoons water and 2 tablespoons of the dry mix.

Dry Mixes in a Jar... Gravy Mixes

Gravy Mix 
3 Tbsp. beef or chicken bouillon granules 

3/4 cup all purpose flour 

1/2 tsp. black pepper 

1/8 tsp salt 

I make 10 xs this recipe and store recipe with it when needed! 

4-1/2 tsp. butter 

3/4 cup water or stock 

In a saucepan melt butter whisk in 2 tablespoons of gravy mix. Cook whisking constantly until light brown. Whisk in water or stock bring to a boil whisking constantly. Cook 2 minutes and serve.

Homemade Chicken Gravy

1-1/3 cups instant nonfat dry milk powder 

3/4 cup instant flour 

3 Tbsp. instant chicken bouillon granules 

1/4 tsp. ground sage 

1/8 tsp. ground thyme 

1/8 tsp. ground pepper 

1/2 cup butter or margarine 

Combine milk powder, instant flour, bouillon granules, thyme, sage and pepper. Stir with a wire whisk to blend. Cut in butter or margarine until evenly distributed. Spoon into a 3- cup container with a tight-fitting lid. Label with date and contents; store in the refrigerator. Use with 4-6 weeks.

Homemade Gravy DRY mix 

Found on Hillbilly CAST IRON Cooking

1/4 cup flour 

1T beef bouillon granules(for chicken gravy use chicken bouillon) 

1T onion powder 

1T garlic powder 

1/4 tsp black pepper 

Dash of dried parsley 

This makes 2 cups of brown gravy mix. Put the dry mix into a plastic baggie for future use. 

To Prepare: Mix the dry gravy mix with 1 cup of cold water in a saucepan. Whisk until smooth. Heat at medium until the sauce thickens, then add another cup of water and whisk once more until smooth. Then.. nothing! You're done! Serve over potatoes, rice, or whatever floats your boat.

TO MAKE A LARGE AMOUNT 

2 cups flour 

1/2 cup beef bouillon granules(for chicken gravy use chicken bouillon) 

1/2 cup onion powder 

1/2 cup garlic powder 

2 tsp black pepper 1T dried parsley 

Mix all together, then portion out into 1/3 cup amounts into plastic baggies

For brown gravy use toasted flour.

French Dressing Mix

1/4 c Sugar 

1 tsp. Dry Mustard 

1/8 tsp. Onion Powder 

1-1/2 tsp. Paprika 

1-1/2 tsp. Salt 

Combine all ingredients in a small bowl; stir until well blended. Put mixture in a foil packet or 1-pint glass jar and label as French Dressing Mix. Store in a cool, dry place and use within 6 months. Makes enough mix (5 Tbsp.) for 1-1/4 cups of French Dressing. 

VARIATION: Sweet Italian Dressing: 

Increase sugar to 1/2 cup. Substitute 1 Tbsp. celery seed for paprika. 

French Dressing: Combine 1 pkt. of mix, 3/4 cup vegetable oil, and 1/4 cup vinegar in a glass jar. Shake until blended.

INGREDIENTS

* 15 saltines, finely crushed 

* 2 cups minced parsley flakes, crushed

* 1⁄2 cup instant minced onion 

* 2 tablespoons dry dill weed

* 1⁄4 cup onion salt

* 1⁄4 cup garlic salt 

* 1⁄4 cup onion powder 

* 1⁄4 cup garlic powder

To make salad dressing

* 1 tablespoon ranch dressing mix 

* 1 cup mayonnaise 

* 1 cup buttermilk

DIRECTIONS

* Put crackers through blender on high speed until powdered.

* Add parsley, minced onions, and dill weed.

* Blend again until powdered.

* Dump into bowl.

* Stir in onion salt, garlic salt, onion powder, and garlic powder.

* Put into container with tight-fitting lid.

Dry Mixes in a Jar... Country Pepper Gravy Mix

Country Pepper Gravy Mix

5 cups all-purpose flour 

2 cups powdered milk 

1/8-1/4 cup of both salt and course black pepper 

1/2 cup cornstarch 

Mix all ingredients in a large bowl and stir well. Put in an airtight container to store. To Make the Gravy:. Take a couple Tbsp. of bacon drippings and heat in a pan over medium heat. Take 3-4 heaping Tbls. of mix and sprinkle over the bacon grease. Using a fork or a whisk, consistently blend the mixture with the bacon grease until the well incorporated and there are NO LUMPS. Add 1-1/2 cup milk and whisk well.

Cook until thickened. Scraping the bottom of the pan often so not to scorch your gravy. If your gravy does scorch, toss out and start over. Nothing worse than burnt gravy! It will be rich and creamy using milk but water will work fine to as there is powdered milk in the mix. Additional salt & pepper to taste. 

Suggestion~cut the recipe down considerably and make a test batch. Try out the gravy to make sure you like it before you make a large batch.

1-1/3 cups instant nonfat milk powder 

3/4 cup instant flour 

3 Tbsp. instant beef bouillon granules 

1/8 tsp. ground thyme 

1/4 tsp. onion powder 

1/8 tsp. ground sage 

1/2 cup butter or margarine 

3 tsp. brown sauce for gravy 

Combine milk powder, instant flour, bouillon granules, thyme, onion powder and sage. Stir with a wire whisk to blend. Cut in butter or margarine until evenly distributed. Drizzle brown sauce for gravy over mixture. Stir with wire whisk until blended. Spoon into a 3-cup container with a tight-fitting lid. Label with date and contents; store in the refrigerator. Use with 4-6 weeks.

Note from Granny... I, personally, had never heard of "instant flour" (had to Google it!)... it's a thing! So, if, like me, you never heard of it...
"Instant flour is low-protein flour that has been "pregelatanized" so that it can dissolve quickly and smoothly in liquids, regardless of temperature. It's usually used to to thicken gravies, sauces, and soups, but it's also occasionally used in baking."

Homemade Cake Mix

Never buy Cake Mix Again

7-1/2 cups sifted flour 

1 Tbsp. salt 

4-1/2 cups sugar 

2 Tbsp. double acting baking powder 

3/4 cup cold butter 

In very large bowl, combine flour, salt, sugar and baking powder and mix well to blend. Cut the butter into small pieces and place in food processor bowl along with 2 cups of the flour mixture. Cover and process until mixture is very fine. Make sure that the butter is completely evenly distributed in the flour mixture. If it isn’t, your cakes will have uneven texture and each will turn out differently. Return to bowl with remaining flour mixture and mix well using a wire whisk. Divide the cake mix into 2-2/3 cups by lightly scooping the mix into measuring cups and leveling off with the back of a knife. Place each portion into a quart glass jar or heavy duty zip lock plastic bags. Cover tightly and store in the refrigerator for up to a month, or in the freezer for up to 3 months. 

Each portion of cake mix will make two 8″ cakes or one 13×9″ cake. 

To make , combine 

2-2/3 cups of the mix, 

1-1/2 teaspoons vanilla, 

1/3 cup oil, 

2 eggs, and 

2/3 cup milk. 

Bake at 350 for 25-35 minutes or until the cake tests done with a toothpick.



Homemade Yellow Cake Mix

Ingredients: 

2-1/4 cups all-purpose flour 

1-1/2 cups granulated sugar 

3-1/2 tsp baking powder 

1 tsp salt 

1-1/4 cups milk 

1/8 cup vegetable oil 

1 stick butter, softened 

1 Tbsp vanilla extract 

3 large eggs

Instructions: 

Measure flour into quart size mason jar Add sugar on top, then baking powder, then salt. Place lid on jar. (My ingredients JUST fit)

When ready to prepare cake: (Write/print these instructions on your jar) 

Place softened butter into stand mixer and mix on medium for 1-2 minutes.

Place dry ingredients into stand mixer and combine with butter for 30 seconds. 

Add milk, oil, vanilla and eggs and mix on medium-high for one minute. 

Pour batter into prepare pans. Bake at 350. For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes. Cool before frosting.

Making a homemade cake mix is so cheap and easy and the best of all worlds when it happens to be super delicious.

DIY - Chocolate Instant Pudding

Found on friendship bread kitchen

Prep Time: 10 minutes Yield: 10 cups

Ingredients

2-1/2 cups nonfat dry milk 

5 cups sugar 

3 cups cornstarch 

1 teaspoon salt 

2-1/2 cups unsweetened cocoa

Directions

1. Mix and store in airtight container.

2. Use 1/2 cup of mix per box of instant pudding being substituted.

3. ENJOY!

Dry Mixes in a Jar... Cookie Starter Mix



Dry Mixes... these mixes are not for canning, but may be stored in canning jars.

Cookie Starter Mix

5 cups flour 

3-3/4 cup white sugar 

2 Tbsp. baking powder 

2 tsp salt 

1-1/2 cup + 2 Tbs soft butter 

Mix all with a pastry blender until resembles coarse meal. Makes 10 cups. Keep in freezer. Bring to room temperature before using. 

Peanut Butter Cookies: 

3 c. starter

1/4 c brown sugar

3/4 c. peanut butter

1 egg

1/2 c. nuts, opt 

Roll in balls; flatten with fork bake 375, 14 min. 

Cinnamon Oatmeal Raisin Cookies 

375 for 12 min 

2 c. starter 

1/2 c shortening 

1 tsp cinnamon 

1 c. brown sugar 

2 tsp vanilla

1 egg 

2 c. old fashioned oats 

1 c raisins 

1-­2 T water, if needed 

Pecan Delights 

Bake 350 for 15 min 

4 c. starter 

3 oz. softened cream cheese 

1 egg 

1 tsp vanilla 

1 tsp almond flavoring 

1 c. finely chopped pecans Optional ­

Cranberry Nut Cookie 

Bake 375 for 12 min 

2 c. starter 

1 T orange zest 

1 tsp cinnamon

1c dried cranberries­ chopped 

3/4 c. chopped nuts 

Shape into balls. Roll balls in sugar. Bake 

Chocolate Pinwheels 

Bake 375 for 10 min 

4 c. starter 

1-1/2 tsp vanilla 

1/4 c. brown sugar 

1 egg 

3 T cocoa 

1 T milk 

Mix 1st 4 and split dough in half. Add cocoa & milk to 1/2. Roll each out to 13 x 7. Place chocolate roll on top of vanilla roll. Roll together lengthwise. Cut 1/4" and bake 

Coconut Squares 

Bake 350 for 12 min 

3 c. starter 

2 eggs 

1 T lemon zest 

1 c. coconut 

3/4 c chopped pecans or walnuts 

1/4 c. dried cherries ­ chopped 

Grease 9 x 13 pan. Bake. Sprinkle with powdered sugar 

Gingerbread Cookies 

Bake 375 for 8 min 

3 c. starter 

1 c. whole wheat flour 

2 tsp ginger 

1/2 tsp nutmeg 

1/2 tsp cinnamon 

1/4 tsp cloves 

1/4 tsp molasses 

2 eggs 

Roll & cut out 

Chocolate Crinkles

Bake 375 for 10 min

Grease cookie sheet. roll into balls then in pwd sugar. bake 

Star Jam Cookies 

Bake 350 for 10 min 

4 c. starter 

1-1/2 tsp vanilla 

1 egg 

Roll out. cut star shapes. before baking, cut smaller star in center of 1/2 the cookies. Bake. To assemble: flip solid star over. spread jam. take star with cut out center as topping.

Chocolate Cake Mix

Found on Canning Craze

Ingredients 

2 Cups All purpose Flour 

1½ cup sugar 

1 Tbsp Baking Powder 

½ cup cocoa Powder (for chocolate only)

Instructions Combine all the ingredients and store in an airtight container or baggie. Keeps well in the pantry for up to 6 months. Above recipe makes one cake mix equivalent to a 18.5 oz boxed mix.

TO MAKE CAKE 

Mix cake mix with 

¾ cup milk or milk substitute, 

1 tsp vanilla, 

½ cup butter or margarine, and 

3 eggs. 

Beat with an electric mixer for 2 minutes and Bake at 350 F. 

To bake a 8-9 inch round pan 20-25 mins 

To Bake 13x9 pan 35-40 mins 

To bake cupcakes- 12-15 mins 

To bake Tube or Bundt Pan 45-50 mins

Corn Bread Mix 
7 c. Flour 

5 c. Cornmeal 

2 c. Sugar 

3 c. Dry Milk 

3/4 c. Baking Powder 

To make Corn Bread or Muffins 

1-­1/4 c. Mix 

1 Egg 

1/2 c. Buttermilk 

2 T. Butter melted 

Bake 350, 8X8 pan 20 min, for higher bread double recipe and bake for 40 min.


Homemade "Jiffy" Cornbread Mix

* ½ cup yellow cornmeal

* ⅔ cup all-purpose flour

* 1 Tbsp baking powder

* 3 Tbsp sugar

* ¼ tsp salt

* 2 Tbsp sunflower or vegetable oil

Instructions

1. Mix all ingredients together. Keep for about a week in a glass jar in your refrigerator or store in zip-lock bags in your freezer.


Jiffy Cornbread Mix

2/3 cup all-purpose flour 

1/2 cup yellow cornmeal 

3 tablespoons granulated sugar 

1 tablespoon baking powder 

1/4 teaspoon salt 

2 tablespoons vegetable oil

To make muffins add 1 egg 1/3 cup milk Combine first 5 ingredients in a bowl, mix well. Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone. If another recipe is calling for a box of Jiffy Corn Muffin Mix, add the above mixed ingredients to that recipe. To make Corn Muffins, Preheat oven to 400F, spray muffin pan with non-stick cooking spray. Combine mix with egg and milk, mixing well. Fill muffin pan 1/2 full, bake at 350 for 15 to 20 minutes.

Bisquick Copycat

from copy cat cook book 

8 cups flour 

1-1/4 c. nonfat dry milk 

1/4 baking powder 

1 Tablespoon salt 

2 cups shortening 

Combine flour, milk, baking powder and salt in large bowl. Cut in shortening until it resembles coarse cornmeal. Store in tightly closed covered container in a cool place. Makes about 10 cups.

Biscuit Mix 

9 cups all­purpose flour 

1-1/2 Tbsp sea salt 

1/4 cup baking powder 

2 cups vegetable shortening (such as Crisco) 

Optional add­ins: Garlic powder, onion powder, herbs, cinnamon and sugar, etc. 

In a large bowl, combine the dry ingredients until well mixed. Measure out and add in vegetable shortening and dig in! Meaning, take off any rings or other jewelry and get your hands down in it and start mixing. Continue mixing until it resembles course crumbs and holds together when squeezed. Store in an airtight container. Yield: 12 cups 

To make biscuits I use 2 cups mix to 2/3 cup milk or water. I have used water when making biscuits to go on top of a pot pie or something similar but milk when I'm making biscuits to eat just as biscuits. Other than that, I use it cup for cup in recipes that call for biscuits. Works perfectly! I like to use whole wheat and the biscuits are more dense than regular but still good.

Buttermilk Pancake Mix
8 C. flour 

4 T. baking powder 

3 T. baking soda 

4 t. salt 

1/2 C. dry egg powder 

2/3 C. sugar 

2-2/3 C. buttermilk powder 

Mix dry ingredients together WELL (and make sure your baking powder is still good!) and store in an air tight container. 
To make pancakes, add 2/3-1 cup water to 1 cup mix.


Pancake And Waffle Mix

3-1/2 cups all purpose flour

2 teaspoon baking soda

Place the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl and stir, using a whisk, to thoroughly combine. Transfer to a clean, dry canister fitted with an airtight lid. Store for up to 3 months. For pancakes: Heat a griddle over high heat. Place 1 cup mix in a medium mixing bowl. Beat 1 egg, 1 tablespoon melted butter, 1/2 cup buttermilk, 1/2 cup milk, and 1/4 teaspoon vanilla together and stir into the dry mix until just combined. Let the mixture rest for 1 to 2 minutes. Reduce heat to medium-low. Lightly brush the griddle with canola oil or butter. Pour 1/3 cup batter for each pancake, leaving 2 inches between each one. Cook until bubbles form on the pancake surface and the underside is golden, about 5 minutes. Flip pancakes and cook until golden, about 2 more minutes.

For waffles: Heat a waffle iron according to manufacturer’s instructions. Place 1 cup mix in a medium mixing bowl. Beat 1 egg, 1 tablespoon melted butter, 3/4 cup buttermilk, and 1/4 teaspoon vanilla together and stir into dry mix until just combined. Lightly oil the iron plates, add batter (waffle iron capacities vary), and cook until waffles are golden brown and crisp, about 5 minutes.

Pancake Mix

(makes 4 recipes) 

8 C. flour 

6 T. + 2 t. baking powder 

4 t. salt 

1/2 C. dry egg powder 

2/3 C. sugar 

1-1/3 C. dry non­instant milk powder or 

2-2/3 C. instant milk powder 

Mix dry ingredients together WELL (and make sure your baking powder is still good!) and store in an air tight container. MAKING PANCAKES FROM THE MIX 2-3/4 C. pancake mix 2-1/4 C. water 1/3 C. oil Mix ingredients together until smooth. Pour onto pre­heated griddle. Flip pancakes when bubbles form.

Pancake Mix 

8 c. Flour 

2 c. Dry Milk 

1/2 c. Sugar 

4 T. Baking Powder 

1-­1/2 T. Baking Soda 

1 T. Kosher Salt 

To make Pancake: 

2 c. Mix 

2 c. Buttermilk or Water 

2 Eggs separated 

4 T. melted Butter 

Mix the egg white with the milk, and the yolks with the butter.Add mix to yolk mixture, then add whites mixture.Rest a few minutes. Griddle at 350, Hold in oven at 200, covered with a towel. 

To make Waffles: 

2-­1/2 c. Mix 

2 c. Water 

3 Eggs 

1/4 c. Butter melted
