Dry Mixes in a Jar... Homemade Cake Mixes


Dry Mixes... these mixes are not for canning, but may be stored in canning jars.



Homemade Cake Mix

Never buy Cake Mix Again

7-1/2 cups sifted flour 

1 Tbsp. salt 

4-1/2 cups sugar 

2 Tbsp. double acting baking powder 

3/4 cup cold butter 

In very large bowl, combine flour, salt, sugar and baking powder and mix well to blend. Cut the butter into small pieces and place in food processor bowl along with 2 cups of the flour mixture. Cover and process until mixture is very fine. Make sure that the butter is completely evenly distributed in the flour mixture. If it isn’t, your cakes will have uneven texture and each will turn out differently. Return to bowl with remaining flour mixture and mix well using a wire whisk. Divide the cake mix into 2-2/3 cups by lightly scooping the mix into measuring cups and leveling off with the back of a knife. Place each portion into a quart glass jar or heavy duty zip lock plastic bags. Cover tightly and store in the refrigerator for up to a month, or in the freezer for up to 3 months. 

Each portion of cake mix will make two 8″ cakes or one 13×9″ cake. 

To make , combine 

2-2/3 cups of the mix, 

1-1/2 teaspoons vanilla, 

1/3 cup oil, 

2 eggs, and 

2/3 cup milk. 

Bake at 350 for 25-35 minutes or until the cake tests done with a toothpick.



Homemade Yellow Cake Mix

Ingredients: 

2-1/4 cups all-purpose flour 

1-1/2 cups granulated sugar 

3-1/2 tsp baking powder 

1 tsp salt 

1-1/4 cups milk 

1/8 cup vegetable oil 

1 stick butter, softened 

1 Tbsp vanilla extract 

3 large eggs

Instructions: 

Measure flour into quart size mason jar Add sugar on top, then baking powder, then salt. Place lid on jar. (My ingredients JUST fit)

When ready to prepare cake: (Write/print these instructions on your jar) 

Place softened butter into stand mixer and mix on medium for 1-2 minutes.

Place dry ingredients into stand mixer and combine with butter for 30 seconds. 

Add milk, oil, vanilla and eggs and mix on medium-high for one minute. 

Pour batter into prepare pans. Bake at 350. For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes. Cool before frosting.

Making a homemade cake mix is so cheap and easy and the best of all worlds when it happens to be super delicious.
