Good Fillings... Currant Pie Filling



Currant Pie Filling

Makes 1 quart 

5 cups Currants

1-1/2 cups sugar

1 cup water

1 Tbsp lemon juice

1/4 cup Clear Jel

Wash currants in batches of no more than two quarts.

Combine water, sugar and ClearJel® in a large, heavy pan and slowly bring to a boil, stirring continuously until it begins to thicken.

Add lemon juice, fold in currants and bring up to simmer. Simmer for 5 minutes and then can immediately.

Canning using hot pack method with 1" of headspace. Processing with a Water Bath for 30 minutes for quart jars, at 212 degrees.

    My question is: where do you find currnants like these in the USA? I have never ever seen these available anywhere at any price. Am constantly seeing great recipes, especially in all the old cookbooks. But have never seen this fruit where I could buy it. The "currants" available dried are really just a type of raisin, a dried grape thing.

    I have purchased (very pricey) currant jelly, and it's just absolutely marvelous! But that's also near impossible to find.

    So I decided I'd plant some currant bushes. And guess what? can't be shipped to North Carolina! Some sort of restriction.

    1. I'm originally from NC, but now live in SC... currants are restricted in NC due to a fungus or something that affects the white pines... I planted a couple bushes here in SC, but have not had much luck thus far! Sorry I am no help to you... this is actually a recipe shared by a reader, I have not tried it myself. ~~Granny
