Red Hot Cranberry Jam with Rum

Makes 3 to 5 - half pints
4 cups cranberry
1-1/2 cup apple cider
1 cup + 6 tbsps sugar
1 jalapeno, radially sliced into thin pieces
1-1/2 tsp crushed pepper
8 cloves
1/4 tsp ginger powder
1/2 tsp salt
zest of 1 lemon
1 Tbsp orange peel cut into thin stripes
2 tsp spiced rum
Directions
Combine all the ingredients except spiced rum in a large enough container and cook over medium heat.
Reduce heat to medium-low and simmer for 20-25 minutes until the mixture gels and attains the desired consistency. Switch off the heat, stir in the spiced rum and ladle the jam into jars to 1/4 inch headspace. Process in a water bath canner for 15 mins. .
