Using Vidalia onions defeats the point of cooking them in oil to convert the sulfur containing compounds into the sweet meaty sulfur containing breakdown molecules. Vidalias are grown in sulfur poor soils so don't have these compounds in the first place. I strained off a bit of the cooking liquid before putting them in the jars and I only used 1 stick of butter per 6 lbs. of onions.
